The Pioneer Woman's Hot Cross Buns

I can't believe how easy and DELICIOUS these were...none left! Thanks again Ree!!!

Ingredients

  • Buns
  • 2 cups Whole Milk
  • 1/2 cup Canola Oil
  • 1/2 cup Sugar
  • 1 package (2 1/4 Teaspoons) Active Dry Yeast
  • 4 cups All-purpose Flour
  • 1/2 cup (additional) Flour
  • 1/2 teaspoon (heaping) Baking Powder
  • 1/2 teaspoon (scant) Baking Soda
  • 2 teaspoons Salt
  • 1/4 cup Sugar
  • 1 teaspoon Cinnamon
  • Spices: Cardamom, Nutmeg, Allspice (optional)
  • 1/2 cup Raisins
  • GLAZE
  • 1 whole Egg White
  • Splash Of Milk
  • Icing
  • 1 whole Egg White
  • Powdered Sugar
  • Splash Of Milk
Directions

BUNS
Combine 2 cups milk, canola oil, and 1/2 cup sugar in a saucepan. Stir and heat until very warm but not boiling. Turn off the heat and allow to cool until mixture is still warm, but not hot--about 30 minutes.
Sprinkle yeast over mixture. Add 4 cups of flour and stir to combine. Mixture will be very sticky. Cover with a towel and set aside for 1 hour.
Add 1/2 cup flour, baking powder, baking soda, and salt. Stir till combined.
Combine 1/4 cup sugar with cinnamon and whatever other spices you want to use.
Lightly flour surface. Press to slightly flatten dough. Sprinkle a couple tablespoons of the sugar/cinnamon mixture. Sprinkle on about a third of the raisins. Then fold the dough over on itself and flatten again so the dough is "plain" again. Repeat the sugar/raisin process, then fold the dough again. Repeat a third time until all the raisins are used. (You won't use all the sugar/cinnamon mixture.)
Pinch off ping pong or golf ball-size bunches of dough. With floured hands, quickly roll it into a ball, then turn the edges under themselves slightly. Place on a lightly greased cookie sheet. Cover and allow to rise in a warm place for at least 30 minutes...an hour-plus is better.
PREHEAT OVEN TO 400 degrees
GLAZE
Mix 1 egg white with a splash of milk. Brush onto each roll.
Bake for 20 minutes, give or take, or until tops of buns have turned nice and golden brown.
Remove from pan and allow to cool on a cooling rack.
ICING
Mix 1 egg white with enough powdered sugar for icing to be very thick. Splash in milk as needed for consistency.
Add icing to a small Ziploc bag and snip the corner. Make icing crosses on each roll, making sure they're completely cooled first.

Lemon Sugar Scrub (Pinterest)

I made this for a very special friend on her birthday! Super easy, smells fantastic, and your skin, so smooth. Enjoy!

Supplies:
  • 2 1/2 cups granulated sugar; divided
  • 1/4 cup coconut oil (almond oil will also work)
  • 1 lemon or lemon natural oils
  • 1-2 Tbsp lemon zest

Put sugar in a large bowl. Set aside. Measure out 1/4 cup of coconut oil and place it in a microwave safe bowl. Heat coconut oil in the microwave for about 30 seconds, or until the oil is melted. Pour oil over sugar and mix to combine.
Using a zester or small grater, zest the rind of 1 lemon. Then, cut zested lemon in half and, using a juicer, juice the lemon. Remove any seeds from lemon juice. Add lemon juice and zest to the sugar mixture and stir to combine.
If sugar scrub is still too “wet”, add up to 1/2 cup more sugar until desired consistency is reached.
Pour your new, fancy lemon sugar scrub into the jar. Voila! All done! Super simple right!?



The Pioneer Woman's Pie Crust

This is a super easy pie crust and so flaky. I usually DO NOT eat the crust on pies but this is so yummy! Enjoy and thanks Ree!

Ingredients

  • 1-1/2 cup Crisco (vegetable Shortening)
  • 3 cups All-purpose Flour
  • 1 whole Egg
  • 5 Tablespoons Cold Water
  • 1 Tablespoon White Vinegar
  • 1 teaspoon Salt
Directions


In a large bowl, with a pastry cutter, gradually work the Crisco into the flour for about 3 or 4 minutes until it resembles a coarse meal. In a small bowl, beat an egg with a fork and then pour it into the flour/shortening mixture. Add 5 tablespoons of cold water, 1 tablespoon of white vinegar and 1 teaspoon of salt. Stir together gently until all of the ingredients are incorporated.
Separate the dough into thirds. ***Note: Separating it into thirds will result in three thin crusts. If you prefer a more substantial crust, separate it in half.*** Form 3 evenly sized balls of dough and place each dough into a large Ziploc bag. Using a rolling pin, slightly flatten each ball of dough (about ½ inch thick) to make rolling easier later. Seal the bags and place them in the freezer until you need them. (If you will be using it immediately it’s still a good idea to put in the freezer for about 15 to 20 minutes to chill.)
When you are ready to use the dough to make a crust, remove from the freezer and allow to thaw for 15 minutes. On a floured surface roll the dough, starting at the center and working your way out. (Sprinkle some flour over top of the dough if it’s a bit too moist.) If the dough is sticking to the countertop use a metal spatula and carefully scrape it up and flip it over and continue rolling until it’s about ½ inch larger in diameter than your pie pan.
With a spatula, lift the dough carefully from the surface of the counter into the pie pan. Gently press the dough against the corner of the pan. Go around the pie pan pinching and tucking the dough to make a clean edge.
Bake as directed by your pie recipe.

Cornflake and Parmesan crusted baked Tilapia

Another quick supper!

Ingredients:
  • 3 cups crushed corn flakes
  • 1 egg, slightly beaten
  • 1/4 cup grated Parmesan cheese
  • 1 tsp or more of kosher salt
  • 1 tsp or more of Tony's Cajun seasoning
  • 1 tsp lemon pepper 
Directions:

In a large zip lock bag, crush the cornflakes using a rolling pin or I just used my hands. You can also use a food processor but come on, it's more fun using your hands, helps with the stress :)

Okay, once you have it all crushed fine pour it into a cake pan with the cheese, mix, use another cake pan for the egg. This will be your "dipping" section.
Season your fish with salt, lemon pepper, and Cajun seasoning. Set aside.

Preheat your oven to 400. I used a large cookie sheet and then put a baking cooling rack on the cookie sheet and sprayed it with cooking spray. That way the fish gets crunchy on the bottom and top.

Ready to dip. Take your seasoned fish, dip it on both sides in the egg mixture, then into the cornflake/cheese mixture, then onto the cooling rack. Don't worry, some of the cornflakes will not stick. Once you have all the fish coated just put any of the excess cornflake mixture on top of the fish. I sprayed the top of the fish as well with the cooking spray.

Bake at 400 for 10 minutes. It will continue to cook after you pull it out of the oven. Let is set for about 5 minutes then serve.

I served this with baked fries and grilled nectarines drizzled with honey and topped with Gorgonzola cheese. The fries were on the bottom rack, fish on top rack of the oven.

Baked Fries:
  • 2 large Yukon gold potatoes, cut up into thin fries
  • 1 tbsp olive oil
  • 1 tbsp Tony's, Cajun seasoning
  • 1 tbsp kosher salt

Preheat oven to 400. Spray a large cookie sheet. In a large bowl, mix the olive oil, seasoning, and potatoes until well coated. Put the fries on the cookie sheet and bake for 10-15 minutes.
Turning once after 10 minutes.

Ranch Chicken and Rice

SUPER easy and delish! The hubby LOVED this dish!

Ingredients:

  • 2 cups uncooked instant rice
  • 1 1/2 cups 1% milk
  • 1 cup water
  • 1 envelope ranch dip mix
  • 1 1/2 lbs (or more) chicken breast, cut into strips
  • 1/4 cup melted butter
  • 1 tsp (or more) kosher salt
Directions:

  1. Preheat the oven to 350, spray/grease a 2 quart baking dish.
  2. In a small bowl, combine the milk, water, and ranch mix.
  3. Put the uncooked rice in the baking dish, pour the milk mixture over the rice, layer the chicken in the dish, drizzle the butter over the chicken, and sprinkle the salt over the entire dish.
  4. Cover and bake for 35 minutes or until no longer pink.
  5. Let it set for about 5 minutes and serve.


Bubble Up Enchilada Casserole

This is a very easy recipe. I browned the meat the night before and it only took 10 minutes to prep and then 25-30 to bake. You can use just 1 lb of beef or turkey. I don't really care for certain ground turkey so I like to "mix it up" and the original recipe did not have any seasoning and I thought it tasted a bit "flat" so I spiced it up a bit. I also recommend using block cheese. Also, I had about 1/4 cup of left over bite size turkey pepperoni that I added to the meat mixture. Enjoy!

Ingredients:

  • 1/2 lb of ground turkey
  • 1/2 lb of extra lean ground beef
  • 1/4 cup turkey bite size pepperoni (optional)
  • 1 10 oz can of enchilada sauce
  • 1 8 oz can of tomato sauce ( I only used half)
  • 1 cup shredded cheese (1/2 cup of mozzarella & 1/2 cup of sharp cheddar)
  • 1/4 cup of diced onion
  • 1/2 tsp or more "just a pinch" McCormick Italian seasoning
  • 1/2 tsp of Tony's, Cajun seasoning
  • 1 can of reduced fat biscuits, cut into quarters

Directions:


1. Preheat oven to 350 degrees. Lightly mist a 2 quart baking dish with cooking spray and set aside. The original recipe uses a 9x13.

2. Brown turkey/beef in a large skillet or saute pan with the diced onion. Drain if there is any excess grease/fat.

3. Add the enchilada sauce, tomato sauce, seasoning, turkey pepperoni, and stir to combine. Put your biscuit pieces in the baking dish. Pour the sauce over the biscuits. Sprinkle the cheese on top.

4. Bake for 25-30 minutes until brown and bubbly. Let stand for 5 minutes before serving.

No bake chocolate eclair dessert (Pinterest)

This is a very easy recipe and the chocolate layer is so rich and delish!!! It literally makes this dessert. Enjoy!

Ingredients

Filling:
2 (3.5 oz.) boxes vanilla instant pudding (or 1 large)
3 c. milk
1 (12 oz.) container Cool Whip
Graham crackers

Topping:
1/3 c. cocoa
1 c. sugar
1/4 c. milk
1 stick (1/2 c.) butter (or margarine)
1 tsp. vanilla

Directions

For the filling:

1. Mix pudding and milk; beat. Stir in Cool Whip.

2. Place a layer of graham crackers in the bottom of a 9x13" dish. Spread 1/2 of the pudding mixture over the graham crackers. Repeat with another layer of graham crackers and pudding; then top with a final layer of graham crackers.


For the topping:

3. Bring cocoa, milk, and sugar to a full rolling boil; boil about 1 minute, stirring very frequently. Remove from heat and cool one minute. Add butter and vanilla; stir until butter is melted.

4. Pour chocolate topping over the top layer of graham crackers.

5. Refrigerate over night.

Lunch Lady Peanut Butter Bars (Pinterest)

Ingredients:
  • 1 1/2 cup AP Flour
  • 1 1/4 tsp salt
  • 1/2 tsp baking soda
  • 3/4 cup butter, softened
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 1 1/2 tsp vanilla
  • 1 1/2 cup of creamy peanut butter (split)
  • 2 eggs
  • 1 1/2 cup quick oats
Frosting:
  • 1/2 cup butter (1 stick)
  • 3 1/2 cup powdered sugar
  • 2 Tbsp cocoa
  • 1/4 cup milk, whatever you have in the fridge (I used evaporated)
  • 1 tsp vanilla
Preheat oven to 350 degrees. In a small mixing bowl, mix together flour, baking soda and salt. In a large mixing bowl, cream together butter, sugars, 3/4 C peanut butter, eggs and vanilla until light and fluffy. Gradually add dry ingredients, just until incorporated. Then, stir in the oats. Spread onto a greased 11 x 15 Jelly Roll Pan (cookie sheet). Bake for 12-15 minutes, or until golden brown. Cool for 10 minutes.

The frosting is a two step process. First, whip the remaining ¾ C Creamy Peanut Butter until it becomes lighter colored and fluffy. Carefully spread the whipped peanut butter over the pan cookie.

Then, add butter to a small sauce pan and melt the butter. Add the milk and cocoa. Cook over medium heat, stirring constantly. Heat just until boiling. Remove from heat and add vanilla. Then, gradually add the powdered sugar. Stir until thickened. Pour over the peanut butter and gently spread over the cookie. Cool completely, and slice into bar cookies.

Potatoes, green beans, and ham..in a crock pot :)

Ingredients:

  • 8 red potatoes, scrubbed and halved
  • 1 (16 oz) package of frozen green beans (or fresh)
  • 1 large onion, chopped
  • 2 cups ham, chopped, I used hormel sliced ham in water (or 1 lb of slightly cooked bacon)
  • 1-2 cans of vegetable or chicken broth (low sodium and fat free)
  • 1 Tbsp Tony's seasoning
  • salt & pepper to taste
Add ALL of the above ingredients to your crock pot, stir to combine, cover, and cook on low for 8-10 hours. Use your own judgement on the amount of broth. I like a lot of broth with my cornbread.
Super easy and tasty!



3 Layer Fudge Brownie Pie

Ingredients:

  • 1 box of fudge brownie mix (follow ingredients/directions on the box)
  • 1 package of large marshmallows or 2 handfuls of mini marshmallows
Frosting:
  • 1/4 cup melted butter
  • 1/4 cup cocoa powder
  • 1/4 cup evaporated milk
  • 8 oz or more powdered sugar

Prepare brownie mix as directed on the box. Spread into a greased 13x9 baking dish. Bake as directed on box. While the brownies are cooking, mix all of the frosting ingredients together in a bowl and set aside.

Once the brownies are cooked, remove from the oven, spread the marshmallows over the top and put it back in the oven for 5 minutes, until slightly brown, remove from the oven and top it with the frosting. Let it set for about 5 minutes. Serve HOT! It's very rich and sweet so I would recommend sharing :) I made this for my husbands work. Super easy!




English Muffin Bread (Pinterest)

Ingredients:

  • 5 1/2 cups warm water
  • 3 packets of rapid rise yeast (1 pkt equals 2 1/4 tsp)
  • 2 Tbsp Salt
  • 3 Tbsp Sugar
  • 11 cups bread flour

In a LARGE mixing bowl, combine ALL ingredients. Spoon into 4 greased loaf pans. Dough will be sticky. Let rise in pans until dough reaches the top of the pans.

Note:To make them rise quicker, while I'm mixing the dough I turn the oven on it's lowest setting, wait for it to heat up, then turn the oven off, leave the door ajar for about a minute and then put the loaf pans in the oven to rise.

Bake at 350 for 35 to 45 minutes or until golden brown.

10 minutes before they are done, brush the tops with melted butter. Let it cool in the pan for about 5 minutes then flip them out on a rack to cool completely. Super easy and NO kneading!

Slice, toast and enjoy! I served it with my Pineapple lemon jam! Yum!

John Wayne Casserole (Pinterest)

I really enjoyed this recipe because it's so versatile. Next time I think I'll just use seasoned ground beef, or pepperoni, or just a can of seasoned refried beans in lieu of taco meat.

Ingredients:
  • 1 1/2 to 2 lbs ground beef
  • 1 packet taco seasoning
  • 4 oz sour cream
  • 4 oz mayonnaise
  • 3 green onions chopped
  • 8 oz cheddar cheese, divided
  • 1/2 to 1 whole sweet onion, chopped
  • 1 sweet bell pepper, chopped
  • 1 tbsp EVOO
  • 2 cups Bisquick or any biscuit mix
  • 2 tomatoes, sliced
  • 1 (4 oz) can of sliced jalapeno peppers (I used 2 tbsp of Kroger brand "no heat" jalapenos)
Directions:
Heat oven to 325. Brown ground beef, drain, and add taco seasoning and water, according to packet
instructions, set aside.
In a separate bowl, combine sour cream, mayonnaise, green onions, and half of the shredded cheese, set aside.
Stir Bisquick mix and water, according to box directions, to form a soft dough. Press dough into a 13x9 greased casserole dish and up the sides. If dough is sticky, just dab your fingers in water to help smooth the dough.
Saute chopped onion and bell peppers in oil until tender, set aside.
On top of the Bisquick mixture, in this order: taco meat, sliced tomatoes, onions, bell peppers, jalapenos, sour cream mixture, and end with the remaining shredded cheese. Bake for 35-45 minutes until golden. Enjoy!

Mama's Strawberry Cake

Another easy recipe :)

Cake Ingredients:
  • 1 box white cake mix
  • 3 tbsp AP flour
  • 1 (3oz) box strawberry jello
  • 1/2 cup water
  • 1/2 cup oil
  • 1 cup frozen strawberries, thawed and chopped
  • 4 eggs
Directions:
Combine cake mix, flour, Jello and water. Add oil and eggs, one at a time, beating well between. Add strawberries. Beat 2 minutes. Pour batter into well greased and floured 9×13 pan. Bake at 350* for about 45 minutes.

Icing Ingredients:
  • 1 stick of butter, softened
  • 1 (8oz) package cream cheese, softened
  • 1 (10 oz) package of frozen strawberries in syrup, thawed and chopped (or pureed)
  • 7 cups (or less/more) powdered sugar
Directions:
In a large bowl, mix the above ingredients until you get an icing consistency. I started off with about 5 cups of sugar and added more as needed.

Spread over cooled cake and top with fresh strawberries and PIG OUT!

Saltine Cracker Pork Chops & Cracker Barrels hash brown casserole (Pinterest)

I changed this one up a bit but LOVED it..the hash brown casserole, well, it did NOT taste like Cracker Barrel, but pretty close. Enjoy!


Pork Chops Ingredients:
  • 2 eggs
  • 1/4 cup milk
  • 4 lean boneless pork chops
  • 1 ream saltine crackers, crushed
  • 1 tsp garlic powder
  • 1 tsp Tony's
  • salt & pepper to taste
  • Oil for frying (about 3/4 cup or less)
  • 1/2 cup water
  • 1/2 cup white wine
  • 1 cube chicken boullion

Directions:

In a shallow dish whisk together the eggs and milk until well blended. Place crushed saltines, garlic powder, Tony's, salt and pepper in another shallow dish. Dip the chops into the egg mixture, then into the cracker crumbs, covering completely. Heat the oil in a large skillet over medium-high heat. Fry chops until golden brown on both sides (about 3-4 minutes). Remove the chops from the pan. Add the water and wine to the skillet. Drop the chicken bouillon cube in the mixture and break it with a spatula to dissolve. Reduce heat to medium-low. Add the chops back to the pan. Cover, and simmer until the pork chops absorb most of the water, about 15 to 20 minutes. Serve.

Cracker Barrel Hash Brown Casserole Ingredients:
  • 1 (32 oz) bag of frozen hash browns, thawed
  • 1 onion, chopped
  • 1 (10 1/2 oz) can cream of mushroom
  • 1 (10 1/2 oz) can cream of celery
  • 1 cup milk
  • 3 tbsp butter
  • 8 oz shredded colby cheese

Directions:

Preheat oven to 350. In a large bowl, mix the first 5 ingredients and only use half the cheese.
Spread the mixture into a greased 13x9. Sprinkle the top with the remaining cheese and "dot" the top with the butter. Bake for 45 to 1 hour until golden and bubbly.







Evil Orange Juice Cake (Pinterest)

Ingredients (Cake):
  • 1 box yellow cake mix
  • 1 small box orange jello
  • 1 cup of OJ (I used half fresh squeezed & half OJ that you drink) Original recipe calls for OJ that you drink
  • 3/4 cup oil
  • 4 eggs
  • 2-3 tsp orange zest
Ingredients (Glaze)
  • 1 cup powdered sugar
  • 3 tbsp orange juice
  • 1 tsp orange zest
**I used a chocolate glaze on this one:  1 cup of semi-sweet chocolate chips, 3 tbsp butter, 2 tbsp Karo corn syrup, 1/2 tsp vanilla. Put it all in a glass bowl (microwave safe), popped it in the microwave for 20 seconds, stirred, ready to glaze :)

Directions:

Heat oven to 325F degrees.

Beat cake mix, dry gelatin, orange juice, oil, eggs and zest in a large bowl on low speed 30 seconds, then on medium speed for 2 minutes or so. Pour into a generously greased bundt pan. Bake for 1 hour.
Cool 10 minutes before removing from pan. Meanwhile, whisk the powdered sugar, orange juice and zest in a small bow. After you move the cake to the serving plate and while the cake is still warm, prick the cake with a fork. Pour glaze evenly over the cake. Allow the cake to completely cool before serving.


Cinnamon & Sugar pull apart bread (Pinterest)

I will make a suggestion on this one, DO NOT ATTEMPT TO MAKE THIS ON A HUMID DAY :) It just didn't rise like it should have. Next time I think I'll put it in the oven to rise. Just turn your oven on to the lowest setting for 5 minutes, turn the oven off, leave the door ajar and put whatever needs to rise inside the oven. I've done this when I've baked bread, rolls, donuts, etc when it's too humid outside. Oh, and you will not stop at just one piece...it's addictive.

Ingredients (Dough):

  • 2 3/4 cup plus 2 Tbsp. all-purpose flour
  • 1/4 cup sugar
  • 2 1/4 tsp. active dry yeast (1 packet)
  • 1/2 tsp salt
  • 4 tbsp butter
  • 1/3 cup whole milk
  • 1/4 cup water
  • 2 eggs (at room temperature)
  • 1 tsp vanilla
Ingredients (Filling):
  • 1 cup sugar
  • 2 tsp ground cinnamon
  • 1/4 tsp nutmeg
  • 4 tbsp butter, melted

Directions:
In a large mixing bowl, mix 2 cups of flour, sugar, yeast, and salt. Set this flour mixture aside.
In a small sauce pan, melt the butter and milk. Once the butter is completely melted take off the burner and add the water and vanilla. Let the mixture cool for 5 minutes. Pour the milk mixture into the large bowl with the dry ingredients and mix well. Whisk together the eggs and add to the batter.
Keep mixing. Add 3/4 cup of flour and mix well. The mixture will be very sticky which means it's perfect. Place the dough in a medium greased bowl.
Cover with wrap and let it sit in a warm place to rise for about 30-45 minutes. Once the dough has doubled its size, knead in 2 tablespoons of flour. Cover the dough again for 5-10 minutes.

Meanwhile, start on the filling. In a medium bowl, mix together the sugar, cinnamon and nutmeg in a small bowl. Set aside.

Once the dough is ready, roll it out on a floured surface. Brush the melted butter on the dough and add the sugar mixture. Make sure everything is covered. Using a shape knife or pizza cutter, cut the dough into equal sized strips (about 2 to 2 1/2 inches wide). Then cut the strips into equal sized squares. Stack the squares on top of each other to make 3 to 4 piles. Don't make stacks to high or your will be cussing when you try to place them into the pan. Also, your bread will come out prettier if you don't stack the squares perfectly aligned. Place squares in the greased bread pan. Take any sugar that fell off squares and sprinkle over the top and around the sides of dough. Cover the dough for another 10-15 minutes to rise.

While dough is rising, preheat your oven to 350 degrees F. Place a cookie sheet under bread pan and bake for 30-35 minutes until outside of bread is golden brown.









Garlic Cheddar Biscuits

Ingredients:

  • 2 cups buttermilk biscuit mix or regular, like Bisquick or jiffy (I used Kroger brand)
  • 1 cup shredded cheddar cheese
  • 1/2 tsp garlic powder (or more) to taste really, I used about 1 tsp
  • 2/3 cup milk
  • 2 tbsp butter, melted
  • 1/2 tsp dried oregano (I used a blend of oregano & McCormick "pinch" of Italian seasoning)
  • 1/2 tsp garlic salt

Directions:
Preheat oven to 400 degrees. Prepare a baking sheet with cooking spray. In a large bowl, mix together biscuit mix, cheese and garlic powder. Add in milk, and stir until well mixed.With a spoon or with your fingers, shape the dough into biscuit-sized clumps, and drop onto the baking sheet. (Note that the dough will pretty much hold its shape when baked, so feel free to pat down random peaks in the dough if you’d like them to look more uniform!)Bake for 10-13 minutes, or until biscuits begin to brown slightly around the edges.While the biscuits bake, prepare the warm butter mixture by mixing together the melted butter, oregano and garlic salt in a small bowl. As soon as the biscuits are removed from the oven, brush the biscuits (while they are still on the baking sheet) with the mixture until they are well-coated.Serve warm.



Chili Dog Casserole (Pinterest)

Very easy and can be made using regular or healthy ingredients. Quick, simple, easy, LOVE those kind of recipes. My son LOVED it!


Ingredients:

  • 2 (15 oz) cans of chili (I used wolf brand turkey chili)
  • 1 (16 oz) package of weenies (I used "light" oscar mayer)
  • 10 flour tortillas (I used wheat fajita style)
  • 1 (8 oz) package of shredded cheddar cheese (I used 2%)

Directions:
Preheat oven to 425 degrees

Spread 1 can of chili in the bottom of a 9x13 inch baking dish. Roll up franks inside tortillas and place in baking dish, seam side down, on top of chili. Top with remaining can of chili, and sprinkle with cheese.

Cover baking dish with aluminum foil, and bake at 425 degrees for 30 minutes.




Cinnamon French Toast Bake (Pillsbury)

I really enjoyed this one as well. When you pour warm syrup over the top it reminds me of a pecan pie. Very good. This was a hit with my son as well, but not the pecans so much :)

Ingredients:

  • 1/4 cup butter, melted
  • 2 cans of refrigerated cinnamon rolls with icing (I used Kroger brand)
  • 5 eggs
  • 1/2 cup heavy whipping cream
  • 2 tsp ground cinnamon
  • 2 tsp vanilla
  • 1 cup chopped pecans
  • 3/4 cup maple syrup (I used half maple and half cane syrup)

Directions:

Pour melted butter in an ungreased 13×9 inch glass dish. Separate cans of dough into 16 rolls reserving the icing for later use. Cut each roll into 8 pieces and add to buttered baking dish.

Beat eggs in medium bowl. Add cream, cinnamon and vanilla and beat until well blended. Pour over cut pieces of cinnamon roll pieces.

Sprinkle with pecans and drizzle 3/4 cup syrup over the top. Bake at 375 for 20 to 28 minutes or until golden brown. Cool 15 minutes.

Remove the covers from icing and microwave on medium or 50% power for 10 to 15 seconds. (Should be thin enough to drizzle.) Drizzle icing over the top. Sprinkle with powdered sugar. Serve with syrup if desired. Yum!

Baked Lemon/Chili Fish with Corn pudding and Lemon garlic English green beans

Fish ingredients:
  • 4 medium size fish of choice (I used Grouper)
  • 1 lemon, sliced
  • 4 tbsp sweet chili sauce
  • 4 tbsp butter
  • 1 tbsp each; lemon pepper, Paul Prudomme seafood seasoning, and old bay
  • kosher salt to taste
Coat both sides of the fish with the chili sauce then season the fish on both sides, the chili sauce will help the seasoning to cling to the fish. I used a small casserole dish, uncovered. Assemble the lemon slices on top of each fish along with 1 tbsp of butter. Bake at 375 for 10 minutes, depending on the fish you use and the thickness, until it starts to flake. Then turn the oven off and broil for about 5 minutes until golden on top. The "gravy" in the bottom of the casserole dish is divine :)

Corn Pudding:
  • 1 box of jiffy cornbread mix
  • 1 can whole kernel corn, drained
  • 1 can cream style corn
  • 1 cup sour cream
  • 4 tbsp melted butter
  • 1/4 cup minced onion
In a large mixing bowl, combine all of the above ingredients. Spray a 9 inch or small casserole dish with cooking spray. Bake 45 minutes at 350 degrees until golden. You may add cheese to this recipe. I would only use about 1/2 cup cheddar.

Lemon/Garlic English green beans:

  • 2 can English green beans, drained
  • 1 garlic, minced
  • 2 tbsp lemon juice
  • 1/4 cup minced onion
  • 1 tbsp olive oil
  • 1 tsp lemon zest
  • 1 tsp lemon pepper
  • salt to taste
In a medium skillet, heat to medium high, add your oil, onions, garlic. Cook for about 5 minutes, then add your green beans, lemon pepper, lemon zest, and salt, cook for another 5 minutes, add lemon juice and remove from heat.
